Awesome Beers still available @ Jefferson

IBUs 110 ABV 10.8%

We first released this decidedly indelicate beer in 2012, as Stone Ruination Tenth Anniversary IPA, to celebrate the 10th anniversary of our belovedly bitter Stone Ruination IPA. Stone RuinTen IPA uses the same recklessly hoppy recipe as the 2012 release; only the name has changed, as we plan to unleash this belligerently delicious hop monster upon the public annually from now on. We packed a whopping five pounds of hops into each barrel, and cranked up the ABV to stand up to the hop onslaught. The results are glorious, and we know you’ll rejoice in tasting this audacious gem of hoppy splendor once again. You’re welcome.

Stone 12.12.12 Vertical Epic Ale
9.0% Alc/Vol
Appearance

Deep black with a dark brown, foamy head.
Aroma

First impressions are of cinnamon and allspice, combined with fruity banana esters and hints of clove from the Belgian yeast. As the beer warms in the glass, swirl it around and take in the aromatics one more time-caramel, dark toffee and molasses notes come into play as well. The end result is a wonderful juxtaposition of roasted malts, yeast esters and baking spices.
Taste

Intense cinnamon, nutmeg and allspice with banana esters dominate up front. Hints of citrus arrive mid-palate, while molasses notes persevere in the finish along with a very nice dark-roasted malt dryness.
Palate

A full, but not sweet, extremely dry finish. Very complex with great flavor balance.
Overall

The aromas wafting through the brewery as we brewed this beer were amazing! We couldn’t think of a better way to sign off this Epic series of beers.

This beer will transport you to a very warm place; the house is warm, a fire’s going and grandma’s in the kitchen baking away.

weston

Weston Brew Labs No. 4 is a malty amber lager that is innocent enough. We then add fresh-cut mangoes and habaneros to the recently fermented beer. The flavors help create a beer that will remind you of the cuisine of the West Indies.

omalleyips

O’Malley’s IPA is another beer that started out as a Brew Labs 22oz. This IPA is built for wider appeal than some of its cousins. With 7.5% abv and 89 IBU it still has all that you expect from an IPA, but with a smoother finish than one might expect.

irish

O’Malley’s Cream Ale -golden in color- is a smooth, sweet and creamy brew with a light floral hop nose, malty middle and smooth finish. Don’t miss the brew that started it all.

hotpepper

Li’l Lucy’s Hot Pepper Ale started out as an experiment. Weston Brew Labs #2. It became the most popular 22oz beer we produced so it graduated to 12oz. Li’l Lucy is a light, golden ale steeped with fresh serrano and jalapeno peppers. Great for those with a love for the heat. It is also great for cooking.

HipsterBrew

Perhaps you heard of a worldwide beer-movement that tributes favorite hipster neighbourhoods across the globe. First came Istedgade, Copenhagen then Södermalm, Stockholm followed by Williamsburg, New York and Shoreditch, London accompanied by Trastevere, Rome & last El Raval, Barcelona. If you feel excluded because you’re hip but your city is not, this cutting-edge, ‘hip without borders’ pale ale is an homage to you – the global hipster. Cheers!

dropkick

We’re thrilled to annouce that Drop Kick Ale was the gold medal winner at the 2010 Lallemand “Brain of Brewers” competition in Denver Colorado in the Amber Ale catagory. This concoction bears the best of an American brown ale and an Enlgish stye bitter to tickle your taste buds pint after pint.

Stillwater Folklore
Human history is filled with myths and legends that shape and define our culture. Rituals, celebrations, gatherings.. whatever. One thing that’s for sure, is we enjoy a proper shindig. So let’s get the stories flowing and share a little ’Folklore’. A bracingly deep ale, built dark and rich with an elegantly lean body, accompanied by heady aromas of Belgian yeast, earthy hops and gently kissed by a wisp of smoke.

french connection

The French Connection Stillwater has been collaborating up a storm in Europe, with Italy, Spain, and France. His new collaboration with 3 different breweries in France is called “The French Connection
Traditional. A classification for the farmhouse ales of France and their sometimes-untraditional new-world counterparts. Bière de Garde is today generally a warm fermented strong pale ale – sometimes blonde, sometimes amber, and has much in common with Belgium ales. Medium bodied with hints of caramel or toffee. Cellared smell and flavor are characteristics. The name means “beer for keeping.

tripel

Initially only available on draft. Draft version brewed in Irvine, bottled version brewed in San Jose.

Our Tripel pours a hazy deep gold with a creamy head. Upfront aromas of fresh plums, orange, white flowers and a hint of hay evolve into aromas of caramel malt and cola as the glass warms. A very balanced flavor profile and a creamy mouthfeel lead into a light malt sweetness with a final transition into a hint of warming alcohol and soft drying bitterness.
