Le Terroir is a french term meaning “of the earth.” Used to reference the environmental conditions that affect the brew, we like to think about the terroir of our foeders. These wooden barrels age our sour beer in varying temperatures, humidity, and vibrations. The terroir of New Belgium, so to speak. Add in another variable by dry-hopping with peachy, mango-like Amarillo hops, and we created a beer that changes every time we brew it.

Stone R&R Coconut IPA

This collaboration beer is a celebration of the homebrewing spirit and an example of counter-intuitive thoughts coalescing beautifully into something exceptional. Case in point is the seamless marrying of toasted coconut and a hop bill brimming with tropical fruit notes. Longtime homebrewers Robert Masterson and Ryan Reschan teamed up to enter this beer in our annual American Homebrewers Association-sanctioned brewing competition and, though it was the first beer they’d ever brewed together, they sailed past the competition like a tropical ocean breeze on a pleasure cruise bound for India. After winning, the duo reached out to their friend, highly decorated homebrewer and 2011 AHA Ninkasi Award winner Paul Sangster of the newly opened Rip Current Brewing Company, to assist in dialing in the recipe. Together with Sangster’s skilled partner Guy Shobe and Stone Brewmaster Mitch Steele, Masterson and Reschan present fellow craft beer enthusiasts with a most delicious and original style of IPA. Stone 17th Anniversary Götterdämmerung IPA

Our latest anniversary beer, starring an all-German cast of malt and hops, is yet one more glorious example of a Stone IPA brewed outside the box. Our brewers have brought their experiments with German hops to fruition, leaving convention behind to create this hefty IPA entirely with pilsner malts. These provide a superbly crisp mouthfeel, while a unique mix of noble and new-school hop varieties adds layers of bright, bitter flavors. Despite the daunting name, this beer isn’t designed to bring about the end of the world, but it just might destroy some of your preconceived notions of what an IPA can be.

Local Option beers are now available at our North County location!

We just started carrying beers from Local Option, based out of Chicago IL – currently we are stocking Blood ov the King – a ‘red wheat ale’ coming in at 6% ABV, and Dampf Loc – a ‘traditional ale’ with 5.3% ABV. Dampf Loc is an all-barley warm fermented ale brewed by the folks from Chicago’s Local Option; inspired by “Dampfbier” originally crafted by medieval peasant inhabitants of southeast Bavaria’s Black Forest. During the fermentation process generous amounts of foam and surface bubbles burst in the tank, giving the illusion that the ferment is boiling or “steaming.”

We first released this decidedly indelicate beer in 2012, as Stone Ruination Tenth Anniversary IPA, to celebrate the 10th anniversary of our belovedly bitter Stone Ruination IPA. Stone RuinTen IPA uses the same recklessly hoppy recipe as the 2012 release; only the name has changed, as we plan to unleash this belligerently delicious hop monster upon the public annually from now on. We packed a whopping five pounds of hops into each barrel, and cranked up the ABV to stand up to the hop onslaught. The results are glorious, and we know you’ll rejoice in tasting this audacious gem of hoppy splendor once again. You’re welcome.

Appearance

Deep black with a dark brown, foamy head.
Aroma

First impressions are of cinnamon and allspice, combined with fruity banana esters and hints of clove from the Belgian yeast. As the beer warms in the glass, swirl it around and take in the aromatics one more time-caramel, dark toffee and molasses notes come into play as well. The end result is a wonderful juxtaposition of roasted malts, yeast esters and baking spices.
Taste

Intense cinnamon, nutmeg and allspice with banana esters dominate up front. Hints of citrus arrive mid-palate, while molasses notes persevere in the finish along with a very nice dark-roasted malt dryness.
Palate

A full, but not sweet, extremely dry finish. Very complex with great flavor balance.
Overall

The aromas wafting through the brewery as we brewed this beer were amazing! We couldn’t think of a better way to sign off this Epic series of beers.

This beer will transport you to a very warm place; the house is warm, a fire’s going and grandma’s in the kitchen baking away.

A true California Red Ale with all ingredients hailing from the Golden State. This hop-yard-specific version of our classic 1881 showcases the lively character and floral aromatics of California-grown hops followed by a clean, crisp finish.

Our California Black IPA embodies Captain Frank Ruhstaller’s legacy, boldy balancing the bright citrus aroma and profile of an IPA with a surprisingly smooth, lightly-roasted chocolate malt body.

Today we also received a fresh shipment of Oude Gueuze Tilquin – bearing the 2013 vintage. We also have a few of the 2012 vintage left, so buy both and try them side by side and see how they compare!

Oude Gueuze Tilquin is a spontaneous fermentation beer, produced from the blending of 1, 2, and 3 year old lambics. It is unfiltered and unpasteurized, and refermented in the bottle for at least 6 months.

 

Be on the lookout tomorrow. We’re supposed to be getting the first Missouri shipment of beer from Excel Brewing, located in Breese IL. Formerly known mostly for Ski soda, an ex-Stone brewer teamed up with Excel to brew some awesome beer! We’re excited!!

The new package will feature two brewery flagships, a seasonal offering, and a new brew, Loose Leaf American Session Ale. Loose Leaf was developed on the brewery’s five barrel pilot system. The Odell brewers wanted to create a beer that was lighter in color, lower in alcohol content, but also flavorful and distinct. The final recipe is crisp and balanced with lower IBU’s and a bright hop aroma. At 4.5% ABV, it’s delicate and refreshingly drinkable with a clean finish.
